烤蛋糕
INGREDIENTS:

• 1/2 teaspoon vanilla extract (if you like the flavor, otherwise, none)5 B2 q. y- r" a2 C& C# C2 r2 o
• 1 1/2 cups sifted flour or all purpose flour (former is better)1 P9 S( {7 {5 [- `1 [8 y& K- A
• 1 1/2 teaspoons baking powder U3 V% c+ p* k) k$ @ H& V g8 j
• 4 eggs, well beaten$ A) ?% Y( b4 U

PREPARATION:
- l; {, U. T- w9 u, OBeat butter; gradually add sugar, beating until light and fluffy. Beat in vanilla. Sift together the dry ingredients; add to cream mixture alternately with beaten eggs, beating well after each addition.
- b5 Y- b) f( A2 j3 z. W& U9 KTurn into greased and floured 8-inch tube pan or 9 x 5 x 3-inch loaf pan. 2 |6 T* B, d0 u& U
Bake in a preheated 350° oven for 45 to 50 minutes. Cool for 5 minutes in the pan then turn out onto a cake rack. Cool and glaze or frost as desired. Store tightly covered.& K/ d- m Z" p) v( Q v; ~5 |$ i

这是yellow cake,我最喜欢的,又简单。ingredients 我一般比较严格执行,否则变味,但是我通常要把糖的用量减至3/4到2/3,洋人用糖量太大,太甜了。但如果你认为cake mix的甜度适合你的口味,就用上述的量。
N: f5 C7 \; u( i7 I$ sbeating,要用mixer, 一般的$10左右的hand mixer 就可以。烤蛋糕,面包,或做土豆泥等都用得上。% \9 U$ |: s. }' u+ P. J: I }( e

检查是否烤熟的办法: 用牙签插一下cake中间,若没有什么粘在牙签上就熟了。 |
