• 1 1/2 cups sifted flour ( if you don’t like the trouble, use all-purpose flour)

• 4 eggs, well beaten

; ?# L3 S& ]2 [; r; b; h; KBeat butter; gradually add sugar, beating until light and fluffy. Beat in vanilla. Sift together the dry ingredients; add to cream mixture alternately with beaten eggs, beating well after each addition. ' z( @! f S, X+ [
Turn into greased and floured 8-inch tube pan or 9 x 5 x 3-inch loaf pan.
* k2 \! a$ Q! p7 HBake in a preheated 350° oven for 45 to 50 minutes. Cool for 5 minutes in the pan then turn out onto a cake rack. Cool and glaze or frost as desired. Store tightly covered.* K$ R* t& G3 G2 w. a8 L

' O# ~0 U0 c# |5 H; A2 ZI normally strictly follow the amount for each ingredient the recipe calls for, except SUGAR( I prefer to cut it to ¾ or 2/3 of the recipe. It is too sweet for some Chinese. But if you like the sweetness of the Cake Mix you got from super market, you can follow the recipe.; x. B, y3 g& k2 ^( S

For beating, you can buy a simple Hand Mixer for about $10. It can not only be used for making cakes but also bread, or mashed potatoes(土豆泥)ect. |
