• 1 1/2 cups sifted flour ( if you don’t like the trouble, use all-purpose flour)

• 4 eggs, well beaten0 `0 T0 y7 c3 M" {1 h) b' Y
PREPARATION:
$ ^0 G3 K& a& v; gBeat butter; gradually add sugar, beating until light and fluffy. Beat in vanilla. Sift together the dry ingredients; add to cream mixture alternately with beaten eggs, beating well after each addition.
( F4 C& R F, Q8 l0 H) O8 UTurn into greased and floured 8-inch tube pan or 9 x 5 x 3-inch loaf pan. 8 G* z5 P! b7 A& V1 X6 A" @6 a! @
Bake in a preheated 350° oven for 45 to 50 minutes. Cool for 5 minutes in the pan then turn out onto a cake rack. Cool and glaze or frost as desired. Store tightly covered. b. b7 i( | M1 G- d6 U/ x, j: M

I normally strictly follow the amount for each ingredient the recipe calls for, except SUGAR( I prefer to cut it to ¾ or 2/3 of the recipe. It is too sweet for some Chinese. But if you like the sweetness of the Cake Mix you got from super market, you can follow the recipe.& A' U, O* {7 w# P3 [" F- F! G
5 y6 X5 }2 s* L, n! t( [5 lFor beating, you can buy a simple Hand Mixer for about $10. It can not only be used for making cakes but also bread, or mashed potatoes(土豆泥)ect. |
