This grilled halibut steaks features the mild, meaty fish on an earthy, turfy, subtly sweet chanterelle mushroom and corn base.

Ingredients

* 2 big halibut steaks+ d& ?: L: P5 d2 K: h7 V% v
* 2 tbsp olive oil5 R. N ]2 _& ?! @
* 1 tbsp butter8 s4 _3 b6 A. c+ [# e3 o3 T
* 2 cups sliced chanterelle mushrooms
. C* o o, c7 Z1 T: V. f * 1/3 cup diced roasted red pepper) r8 D1 C2 U u% P! f
* 1 cup fresh corn kernels9 ~" S. c$ ~5 P$ P; k* w; y
* 1/2 cup water$ V3 t* r0 {( h/ c! L# n- }" c# p
* 1 lemon, juiced& N$ F. ` _/ |1 O4 _
* salt and fresh ground black pepper

Step 1
# {) W8 g) m5 R' |2 G! a# S2 u) JSlice the chanterelle mushrooms into nice big and thick slices. Add 2 tbsp olive oil in a saute pan over medium heat. Add the mushroom slices and a pinch of salt in the pan. Give it a stir. Cook for 10 minutes or until the mushroom slices are lightly browned.

Step 2 - H1 v" S! c2 s6 ?1 t; G* I
Add 1 cup fresh corn kernels,
$ W! l( o6 ?; u! T; A" dand 1/3 cup diced roasted red pepper or 1/2 red bell pepper, and 1/2 cup water in the pan. Bring it to a simmer, and simmer for 5 minutes. Add 1 tbsp butter and the juice of 1 lemon. Give it a mix. Turn the heat to low. % M- |7 C2 F7 C( I* L0 n
Step 3 5 l3 e9 \1 w3 ~3 W: F
Season the 2 big halibut steaks with salt and pepper. Grill for 4 minutes per side.

Transfer the mushroom and corn mixture to a serving plate. Spoon over the sauce. Add 1 tbsp minced fresh tarragon.
