* 2 big halibut steaks
G! c; u2 ~9 H; L f! Y4 A6 o * 2 tbsp olive oil
; y; a! M- q4 G * 1 tbsp butter4 ]3 S0 ?6 n% w. l, F" U9 q
* 2 cups sliced chanterelle mushrooms r, ^4 k2 @( G: ], w+ d# y+ X
* 1/3 cup diced roasted red pepper0 v u* a- Q1 D+ r6 Q& b+ [$ m
* 1 cup fresh corn kernels
+ ]+ f1 V" X p7 A * 1/2 cup water

* salt and fresh ground black pepper

Slice the chanterelle mushrooms into nice big and thick slices. Add 2 tbsp olive oil in a saute pan over medium heat. Add the mushroom slices and a pinch of salt in the pan. Give it a stir. Cook for 10 minutes or until the mushroom slices are lightly browned.

Add 1 cup fresh corn kernels,4 N2 O$ y! Z* w9 {- y' I
and 1/3 cup diced roasted red pepper or 1/2 red bell pepper, and 1/2 cup water in the pan. Bring it to a simmer, and simmer for 5 minutes. Add 1 tbsp butter and the juice of 1 lemon. Give it a mix. Turn the heat to low. * W0 u+ F4 o( f9 x8 M
Step 3 4 y7 g* o) {! f2 S0 B, y( w# a- H2 T
Season the 2 big halibut steaks with salt and pepper. Grill for 4 minutes per side.6 G% o8 \, S, p) V$ |7 u! M. P

Transfer the mushroom and corn mixture to a serving plate. Spoon over the sauce. Add 1 tbsp minced fresh tarragon.
