Beef with Broccoli

) k) v7 I# t- c; R3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces8 V; A1 ]: A* x, f5 c5 I: t

1 egg
) T" E: N; v$ |& p1/3 tsp (1.5 mL) salt/ H8 G! L) x9 |! B0 _2 v( A( d
1 Tbsp (15 mL) cooking wine
' T: _; i7 O8 r. I6 S2 `( e1 Tbsp (15 mL) cornstarch5 C3 Z# _) _' M: G1 D: {0 b# w- X
2 Tbsp water6 N# x: o( z: i! ?) S/ I

# ]: Y: G3 D  m) z$ l9 g4 R' z. p% r1 1/2 Tbsp (20 mL) oil

1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
8 u, d# a, I$ P4 K3 A9 R% A0 j1 cup (250 mL) cooking oil
" F0 q/ F9 K' Z* m; L/ {7 _% `7 h2 1/2 Tbsp (30 mL) oyster sauce8 {; O. P( B! C) ~, [, D. P6 z
2 Tbsp (25 mL) light soy sauce0 c6 a5 |+ b! `! M
3/4 Tbsp (10 mL) dark soy sauce
* b+ ?$ q! L: T  I6 P1 Tbsp (15 mL) sugar! V" V7 R2 U; E- ]& s
a few drops of sesame oil3 ~" w9 d( w4 X5 D" s0 ?
2 cloves garlic, crushed
  b8 `2 X9 `; }  p& i- l  O: D5 {1/2 cup (125 mL) chicken broth# ]# f. R0 t" _% x
2 Tbsp cornstarch (if desired)
! i7 w' R2 {) d! s1 N$ p1 w/ W% i, y
Directions:2 R6 B  Q( a- C- C; z! ~2 F
Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. : ]- |6 J3 n3 b- ^; E" Q6 `$ M
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.: x) n  D9 o5 X  O$ r
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  0 e4 u& Y" ]% Z
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
