Beef with Broccoli

0 e( n: ?& f7 t# n" Z# A3 d9 K3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces1 l; G' E6 n- s1 n9 N) J+ d1 P0 \

1 egg : G+ `; M( i, }+ I1 |( P. l+ ?+ E* i& Z
1/3 tsp (1.5 mL) salt9 m' g$ i* _0 f8 Z( j) E
1 Tbsp (15 mL) cooking wine
; e7 h- {* `% c7 ^+ c& s1 Tbsp (15 mL) cornstarch
7 }& E8 V4 \/ M- h2 R8 d: F9 ^3 ?" f2 m2 Tbsp water0 g; Z6 x$ i. ^9 L6 X

: q" S2 M8 ~% u) S+ w: r1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices9 r% @. [  |2 j
1 cup (250 mL) cooking oil
/ e# E6 U+ ^* ]/ G/ I6 R6 w2 1/2 Tbsp (30 mL) oyster sauce% H  W$ x( ^' e' H1 `! B
2 Tbsp (25 mL) light soy sauce
2 h* S/ `8 _  u8 A3/4 Tbsp (10 mL) dark soy sauce
- X! u& l# `9 q+ Z% V1 Tbsp (15 mL) sugar* E5 i7 Y; E* L! G9 {& u
a few drops of sesame oil9 o' C! M4 n9 H1 s3 r% Z5 ?
2 cloves garlic, crushed
' T2 Y# |7 T$ a1/2 cup (125 mL) chicken broth2 t6 {9 D# k; A1 ~
2 Tbsp cornstarch (if desired)/ }3 m$ [4 ?7 b. L8 V% u

! T. @7 m; S# h) B* n* ~4 RSlice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. ( O0 O8 w( ^( C' N
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel." F5 g* x* e2 t/ Y% q2 Z4 N
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  & @) A* d5 H$ o! M; M8 w% c
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
