烤蛋糕

• 1 cup sugar
9 N+ J/ j! Q. Q- g5 S• 1/2 teaspoon vanilla extract (if you like the flavor, otherwise, none)8 W% i% K; Q9 I7 {, T3 R
• 1 1/2 cups sifted flour or all purpose flour (former is better)

6 f* w5 h! r/ p- }5 ^! Q& y: @# K• 4 eggs, well beaten' q5 b1 w( w0 S' F

PREPARATION:
! Z$ u) Y0 ~. m1 L& X* L! M& qBeat butter; gradually add sugar, beating until light and fluffy. Beat in vanilla. Sift together the dry ingredients; add to cream mixture alternately with beaten eggs, beating well after each addition.
! t% x. c: s5 Y. C9 V. z& YTurn into greased and floured 8-inch tube pan or 9 x 5 x 3-inch loaf pan. ! T' `' N6 N8 H. L; t( W' ?
Bake in a preheated 350° oven for 45 to 50 minutes. Cool for 5 minutes in the pan then turn out onto a cake rack. Cool and glaze or frost as desired. Store tightly covered.& p8 B+ V7 g% q- ~' S

这是yellow cake,我最喜欢的,又简单。ingredients 我一般比较严格执行,否则变味,但是我通常要把糖的用量减至3/4到2/3,洋人用糖量太大,太甜了。但如果你认为cake mix的甜度适合你的口味,就用上述的量。; c R1 M+ ~; d% t- O
beating,要用mixer, 一般的$10左右的hand mixer 就可以。烤蛋糕,面包,或做土豆泥等都用得上。' P) X8 L# R! L9 n0 ~
