* 2 big halibut steaks
& P$ U' y5 c3 g) [( F7 ~# g* z9 U * 2 tbsp olive oil
& Y5 q/ y+ |: X u, F * 1 tbsp butter% b$ e$ n( D! _2 G5 d4 m% g3 d9 z/ d
* 2 cups sliced chanterelle mushrooms/ {3 E+ x' G% L3 T' n5 @5 x
* 1/3 cup diced roasted red pepper
4 C' Z* B/ {( z# f* ^% ] * 1 cup fresh corn kernels

* 1 lemon, juiced

* 1 tbsp minced fresh tarragon m2 D6 D z- o4 W8 I# m
* micro greens for garnish

Slice the chanterelle mushrooms into nice big and thick slices. Add 2 tbsp olive oil in a saute pan over medium heat. Add the mushroom slices and a pinch of salt in the pan. Give it a stir. Cook for 10 minutes or until the mushroom slices are lightly browned.

Add 1 cup fresh corn kernels,# }$ [) s z7 x# U0 e3 z
and 1/3 cup diced roasted red pepper or 1/2 red bell pepper, and 1/2 cup water in the pan. Bring it to a simmer, and simmer for 5 minutes. Add 1 tbsp butter and the juice of 1 lemon. Give it a mix. Turn the heat to low. 2 [6 M; U: j+ M3 @ Z" t1 L& O( @

Transfer the mushroom and corn mixture to a serving plate. Spoon over the sauce. Add 1 tbsp minced fresh tarragon.* Q4 A6 P4 H. r' y/ L$ K! Z
Place the grilled halibut steak on the top, add some lemon cubes beside it, some micro greens on the halibut steak. Enjoy! |
