This grilled halibut steaks features the mild, meaty fish on an earthy, turfy, subtly sweet chanterelle mushroom and corn base.

Ingredients

4 W, g6 \- B/ u5 N( Y * 2 big halibut steaks" y' D7 v3 U! a% y0 z
* 2 tbsp olive oil
( b# w2 K/ E; o1 b) i * 1 tbsp butter
$ y5 \4 J: w9 ? O * 2 cups sliced chanterelle mushrooms
/ K+ q3 V' m4 ~2 v2 V( j* ^- R * 1/3 cup diced roasted red pepper
& }" q' s7 ^! |" q" f5 [ * 1 cup fresh corn kernels: [8 f* ?7 z* f/ g/ o. y
* 1/2 cup water
% c8 F' i, Z& L/ b * 1 lemon, juiced" c. P/ A+ u0 H& a5 ?
* salt and fresh ground black pepper

Step 1 " P h4 `" D' B% F
Slice the chanterelle mushrooms into nice big and thick slices. Add 2 tbsp olive oil in a saute pan over medium heat. Add the mushroom slices and a pinch of salt in the pan. Give it a stir. Cook for 10 minutes or until the mushroom slices are lightly browned. 5 |! ]/ y' D& y% D6 p9 k8 c

Add 1 cup fresh corn kernels,: w* o6 k, M) N- N, Q/ S
and 1/3 cup diced roasted red pepper or 1/2 red bell pepper, and 1/2 cup water in the pan. Bring it to a simmer, and simmer for 5 minutes. Add 1 tbsp butter and the juice of 1 lemon. Give it a mix. Turn the heat to low. - t% Q) Z9 k, }$ v
Step 3
$ A: F% t& i" o+ eSeason the 2 big halibut steaks with salt and pepper. Grill for 4 minutes per side.( p G5 p$ F+ H+ Z

0 l8 @! H6 }* r) LTransfer the mushroom and corn mixture to a serving plate. Spoon over the sauce. Add 1 tbsp minced fresh tarragon.
