Beef with Broccoli

Beef with Broccoli

3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces4 U4 \* z! }, [/ b  @# S

) w+ O* L" E/ tMarinade for Beef:
$ x3 Y0 C% k2 H; K1 egg 6 s! C* T8 h/ I- U7 O0 y
1/3 tsp (1.5 mL) salt
0 C" J# B# _3 ?; N1 Tbsp (15 mL) cooking wine
8 Q# c. l& n) m8 O6 V9 ^0 M$ G2 H% ?1 Tbsp (15 mL) cornstarch
8 i" v' T$ H7 c, z2 Tbsp water8 F' ?5 ]+ N2 i5 Y! ^* t( y( j6 S

1 [* H: O9 z) y# I5 c9 b. F1 1/2 Tbsp (20 mL) oil
5 F8 c9 c1 k" @. z1 q4 J/ ~0 \8 o
  W0 X6 E: N! j* i. d, g0 j1 G1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
' T, A, b* n9 @! T5 z6 a& Q8 A1 o1 cup (250 mL) cooking oil
: k- F$ c+ T$ ]2 1/2 Tbsp (30 mL) oyster sauce% y) j- H! u: z1 z
2 Tbsp (25 mL) light soy sauce# f3 H. r& F  @% P0 a
3/4 Tbsp (10 mL) dark soy sauce9 u! ]# k( e! l6 `
1 Tbsp (15 mL) sugar! D+ M& m' f4 M
a few drops of sesame oil
+ m2 z2 R! ^, k2 cloves garlic, crushed* F  s' O: f; L6 _4 z; Q5 K
1/2 cup (125 mL) chicken broth
; A6 `# L: ]) V* ~7 E2 Tbsp cornstarch (if desired)
) ^) S5 u6 [% y5 I/ S3 I
% }) U5 ?$ x9 W7 @& ZDirections:
2 `0 {4 F* M( w, MSlice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables. 7 D0 q4 j9 J& n# I7 b
Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.8 P+ O  Z; y3 s% d/ A3 u9 i
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
+ o4 D+ v$ G6 H  v2 e+ }/ `# NHeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.

Variations
' X* a2 p1 |8 }' K0 f*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
