Beef with Broccoli

3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces

Marinade for Beef:

) P$ P2 M* u( P( |+ A$ G! F1/3 tsp (1.5 mL) salt
; T0 m, u/ _0 m5 e8 h4 M% c1 Tbsp (15 mL) cooking wine; H$ _+ N( L: f8 m$ y
1 Tbsp (15 mL) cornstarch

1 1/2 Tbsp (20 mL) oil, D7 g& |+ k0 t: Z7 E" e
7 S* g# q3 ]" Q2 w1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
7 E' @' R* H$ l+ a+ v! S1 cup (250 mL) cooking oil% A) t7 T1 X1 D7 Z) O( Y& ^, A1 d
2 1/2 Tbsp (30 mL) oyster sauce: O( M$ r) v1 h& [$ a: {- h
2 Tbsp (25 mL) light soy sauce
6 v) x7 z$ O* ~+ V& u# s1 P3/4 Tbsp (10 mL) dark soy sauce# L1 L) t0 s3 V! w
1 Tbsp (15 mL) sugar
N5 x0 d1 _ K; z) \ m& U {% }a few drops of sesame oil
$ F5 T$ K; ?9 u' `2 cloves garlic, crushed
" }( n0 H/ _0 b- ~+ c, ^1/2 cup (125 mL) chicken broth

Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
) Q2 g4 K* e0 c: PHeat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.( D. [7 W1 w$ J! @
Add 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok. 0 o6 X- J# z+ m% i+ M2 R- u
Heat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients. Serve hot.* J7 q+ C* h( b. Z5 d1 H1 g; i

*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water). |
