• 1/2 teaspoon vanilla extract( if you like the flavor)

• 1 1/2 teaspoons baking powder

8 v# t! c0 G& m, Y. yBeat butter; gradually add sugar, beating until light and fluffy. Beat in vanilla. Sift together the dry ingredients; add to cream mixture alternately with beaten eggs, beating well after each addition.
% R) J4 k% O2 x L0 } F5 D5 |Turn into greased and floured 8-inch tube pan or 9 x 5 x 3-inch loaf pan. ; y. d; A: C2 k% i
Bake in a preheated 350° oven for 45 to 50 minutes. Cool for 5 minutes in the pan then turn out onto a cake rack. Cool and glaze or frost as desired. Store tightly covered.

I normally strictly follow the amount for each ingredient the recipe calls for, except SUGAR( I prefer to cut it to ¾ or 2/3 of the recipe. It is too sweet for some Chinese. But if you like the sweetness of the Cake Mix you got from super market, you can follow the recipe.

1 h$ k6 l; p" K/ j+ ~For beating, you can buy a simple Hand Mixer for about $10. It can not only be used for making cakes but also bread, or mashed potatoes(土豆泥)ect. |
