Beef with Broccoli

Ingredients:
5 o3 u5 K; J) R# O2 Y9 T3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces, X* J2 Q: ^* e. ~# w* _2 h0 g5 O

Marinade for Beef: 2 B* [7 X9 J5 ]! R7 K8 O# K
1 egg - y& @* w/ A- {8 e5 Y7 V* t
1/3 tsp (1.5 mL) salt
" d6 C# Q, C) Y) ]7 W. C1 Tbsp (15 mL) cooking wine$ A/ }) l' b) h! H. g
1 Tbsp (15 mL) cornstarch4 Q1 b9 N& |' n
2 Tbsp water
0 I% l7 [1 `. w( q/ ]; ^6 K: E0 J
0 F: C# ?. r; [/ n6 I1 1/2 Tbsp (20 mL) oil4 ~" q6 c/ L2 B6 T0 h; w) @

/ O0 Y# p9 G/ w6 T9 P( Z- m1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices
. j0 C$ A- e8 K+ E0 y( ?1 cup (250 mL) cooking oil1 Y, K: l* ?! e
2 1/2 Tbsp (30 mL) oyster sauce8 M- `- J) u, C6 a  @
2 Tbsp (25 mL) light soy sauce8 T, e' N, b( p: X
3/4 Tbsp (10 mL) dark soy sauce* g- H: q+ `# u) m
1 Tbsp (15 mL) sugar& x3 [. B0 \6 \5 Z% m
a few drops of sesame oil6 F1 [% |( `" ?4 T
2 cloves garlic, crushed
3 d/ U7 j+ l" w- J1/2 cup (125 mL) chicken broth
6 E' u- T- m7 H) o8 v1 ?2 [6 m2 Tbsp cornstarch (if desired)

& Z8 b5 Q  Z; V/ n( z- cDirections:0 c4 n# O  Y; W
Slice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
# |5 w3 a6 u7 n2 ^  x7 o# _Heat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
% O$ ^0 M1 Q% r" QAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
+ t+ Q! p% _) c( `3 Z9 PHeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot." M) F5 t; H& {6 a

*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
