烤蛋糕
INGREDIENTS:$ a9 f! l& ~' m
• 1/2 cup butter
5 z3 [% v; g" t9 P; y G5 ^4 q• 1 cup sugar 9 }( N0 V- N# Z; t! |; [
• 1/2 teaspoon vanilla extract (if you like the flavor, otherwise, none)
/ E! T% G% h; v. T( L• 1 1/2 cups sifted flour or all purpose flour (former is better) a1 w0 G( V" _4 [: h l; ]% x I9 m
• 1 1/2 teaspoons baking powder

0 e* z7 J# O2 _+ t6 ^$ HBeat butter; gradually add sugar, beating until light and fluffy. Beat in vanilla. Sift together the dry ingredients; add to cream mixture alternately with beaten eggs, beating well after each addition.
7 Z( u2 d2 D7 m- x( ]Turn into greased and floured 8-inch tube pan or 9 x 5 x 3-inch loaf pan.
& P" F2 B F% ?* U. a* VBake in a preheated 350° oven for 45 to 50 minutes. Cool for 5 minutes in the pan then turn out onto a cake rack. Cool and glaze or frost as desired. Store tightly covered.

这是yellow cake,我最喜欢的,又简单。ingredients 我一般比较严格执行,否则变味,但是我通常要把糖的用量减至3/4到2/3,洋人用糖量太大,太甜了。但如果你认为cake mix的甜度适合你的口味,就用上述的量。5 n6 N, c I P) ^3 w: E
beating,要用mixer, 一般的$10左右的hand mixer 就可以。烤蛋糕,面包,或做土豆泥等都用得上。

检查是否烤熟的办法: 用牙签插一下cake中间,若没有什么粘在牙签上就熟了。 |
