烤蛋糕

• 1/2 cup butter 3 ?9 W9 }/ q( C! ?' N0 X3 a5 V
• 1 cup sugar
/ d2 l) H. a+ M- i9 x• 1/2 teaspoon vanilla extract (if you like the flavor, otherwise, none)( b& W$ p9 j+ B* k, ]0 D
• 1 1/2 cups sifted flour or all purpose flour (former is better), r4 K" O# R& u' ~+ e
• 1 1/2 teaspoons baking powder " Y0 b" q# Y+ h G& T. P
• 4 eggs, well beaten

PREPARATION:
8 l# N9 m4 \! N: C5 h2 DBeat butter; gradually add sugar, beating until light and fluffy. Beat in vanilla. Sift together the dry ingredients; add to cream mixture alternately with beaten eggs, beating well after each addition. # E" j0 L# q' |3 |3 p2 N
Turn into greased and floured 8-inch tube pan or 9 x 5 x 3-inch loaf pan. ! w7 v7 J8 R% `3 J8 {9 V% z! `
Bake in a preheated 350° oven for 45 to 50 minutes. Cool for 5 minutes in the pan then turn out onto a cake rack. Cool and glaze or frost as desired. Store tightly covered.

! \" i+ b3 h, o# t8 V6 V- {- z这是yellow cake,我最喜欢的,又简单。ingredients 我一般比较严格执行,否则变味,但是我通常要把糖的用量减至3/4到2/3,洋人用糖量太大,太甜了。但如果你认为cake mix的甜度适合你的口味,就用上述的量。( v5 G0 n- E' d9 }; ` g# F e" V
beating,要用mixer, 一般的$10左右的hand mixer 就可以。烤蛋糕,面包,或做土豆泥等都用得上。

检查是否烤熟的办法: 用牙签插一下cake中间,若没有什么粘在牙签上就熟了。 |
