烤蛋糕

• 1/2 cup butter
8 x, {! Z$ G% X0 u P5 k• 1 cup sugar 8 ~. u& T) f* V: _
• 1/2 teaspoon vanilla extract (if you like the flavor, otherwise, none)
' M$ N; {9 G9 t) u9 a" A• 1 1/2 cups sifted flour or all purpose flour (former is better)- x! @" j0 `0 e& R: p4 @9 ~7 F
• 1 1/2 teaspoons baking powder 2 V& _! o& d# l) \; _' f7 a
• 4 eggs, well beaten( Q% m7 T- l5 I% |4 |# [/ f

PREPARATION:; {2 W0 _2 P1 U& {( S
Beat butter; gradually add sugar, beating until light and fluffy. Beat in vanilla. Sift together the dry ingredients; add to cream mixture alternately with beaten eggs, beating well after each addition.
* A) R" t o/ _2 } h% b% w. OTurn into greased and floured 8-inch tube pan or 9 x 5 x 3-inch loaf pan. * v, v/ u- z+ \/ L9 V# w
Bake in a preheated 350° oven for 45 to 50 minutes. Cool for 5 minutes in the pan then turn out onto a cake rack. Cool and glaze or frost as desired. Store tightly covered.

这是yellow cake,我最喜欢的,又简单。ingredients 我一般比较严格执行,否则变味,但是我通常要把糖的用量减至3/4到2/3,洋人用糖量太大,太甜了。但如果你认为cake mix的甜度适合你的口味,就用上述的量。1 T7 h! J( F2 T/ j# q/ d
beating,要用mixer, 一般的$10左右的hand mixer 就可以。烤蛋糕,面包,或做土豆泥等都用得上。
