烤蛋糕
INGREDIENTS:

9 N0 A2 l$ r! `8 r2 ^• 1/2 teaspoon vanilla extract (if you like the flavor, otherwise, none)+ U* ^! X' F$ T, \; L) o
• 1 1/2 cups sifted flour or all purpose flour (former is better)
/ d4 Q$ o4 ]: q, D. y g• 1 1/2 teaspoons baking powder
' e. Z |! C2 i• 4 eggs, well beaten

PREPARATION:. Y7 m# ^7 x* M8 ?
Beat butter; gradually add sugar, beating until light and fluffy. Beat in vanilla. Sift together the dry ingredients; add to cream mixture alternately with beaten eggs, beating well after each addition. 4 d9 L' s, C/ `' O% L. v& p
Turn into greased and floured 8-inch tube pan or 9 x 5 x 3-inch loaf pan. 7 k+ {' F: _# h) _' z
Bake in a preheated 350° oven for 45 to 50 minutes. Cool for 5 minutes in the pan then turn out onto a cake rack. Cool and glaze or frost as desired. Store tightly covered.

7 X1 O8 y8 E* J4 V; U这是yellow cake,我最喜欢的,又简单。ingredients 我一般比较严格执行,否则变味,但是我通常要把糖的用量减至3/4到2/3,洋人用糖量太大,太甜了。但如果你认为cake mix的甜度适合你的口味,就用上述的量。+ D6 t4 p) @8 z- Y$ A9 D
beating,要用mixer, 一般的$10左右的hand mixer 就可以。烤蛋糕,面包,或做土豆泥等都用得上。

检查是否烤熟的办法: 用牙签插一下cake中间,若没有什么粘在牙签上就熟了。 |
