* 2 big halibut steaks) T# m( G/ _% s
* 2 tbsp olive oil( r: ?& u6 ]+ Q0 ?. b
* 1 tbsp butter( q' D( \& |: P8 }' P
* 2 cups sliced chanterelle mushrooms5 p0 g$ V+ ]$ w$ F3 L) f
* 1/3 cup diced roasted red pepper

* salt and fresh ground black pepper

Step 1
9 o5 z3 s5 T/ [) eSlice the chanterelle mushrooms into nice big and thick slices. Add 2 tbsp olive oil in a saute pan over medium heat. Add the mushroom slices and a pinch of salt in the pan. Give it a stir. Cook for 10 minutes or until the mushroom slices are lightly browned.

Step 2 ; ]5 L3 K) m! x! F! D
Add 1 cup fresh corn kernels,
% [7 ]6 `4 Z4 R5 q% I( i8 y6 _and 1/3 cup diced roasted red pepper or 1/2 red bell pepper, and 1/2 cup water in the pan. Bring it to a simmer, and simmer for 5 minutes. Add 1 tbsp butter and the juice of 1 lemon. Give it a mix. Turn the heat to low. 3 ?3 I& E; A6 w
Step 3 ) s; q' f$ r" R/ f( G
Season the 2 big halibut steaks with salt and pepper. Grill for 4 minutes per side." ~# T4 R7 T1 H$ i

Transfer the mushroom and corn mixture to a serving plate. Spoon over the sauce. Add 1 tbsp minced fresh tarragon.
