我买superstore的fresh yeast,团成小丸子冻到 冰仓里。要蒸时,早上拿出一块,温水化开,倒面粉揉成面团。然后用小一号的盆接热水,将放面团的盆架在小盆上。( M) E; J' n% V# Y9 ]* R

我现在的标准是:6杯面,汤圆大小的酵母,不放水,大约1杯半牛奶,就是用牛奶和面,面包机搅好,放半个小时,整形,再2次发酵20分钟,冷水中火蒸30分钟,保证好!. E6 Z' q5 z. w, n8 Y

Wate tempeature should be the same as your body temperature, means it is about 36~38 degree. You can test it by using your figures. Please remeber do not olny use cold water and hot water. $ d" Z8 ?- Z; E! ?
9 a* I1 T2 w/ wUsually I prepare a big bowl, mix hot water and cold water to adjust water temperature(you can use only milk instead of water, same mathod), then put yeast in water, add a tea spool sugar. Wait until yeast melt. So you can start to make dough.
